Photo Friday

I was trying to get a good picture of Luco this morning. I LOVE this one!

Speaking of basil, here's my favorite recipe for pesto. I could eat this every day.

Pesto

2 cups packed fresh basil leaves
1/3 cup pine nuts
1 large garlic clove
1/4 tsp salt
1/2 cup olive oil
1/3 cup grated Parmesan cheese

Finely chop the basil, pine nuts, garlic and salt in a food processor (I use a blender). Gradually add the olive oil until mixture is thoroughly blended. Transfer to a bowl; fold in the cheese.

Remove 1/2 cup of the cooking liquid before draining pasta. Toss past immediately with the pesto sauce and the reserved cooking liquid. Serve at once with additional cheese, if desired.

Sometimes these snippets of your life make me feel like I'm looking in a mirror! The silly doggie, daisy-type flowers, tomatoes and basil growing wild! I just made pesto, too!!!!!!!!! I added a bunch of spinach and walnuts to the batch b/c I didn't quite have the right stuff - was still pretty good. Do you like cilantro?
